Ingredients

  • 4 pieces Turkey or chicken cutlets
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 8 ounces Cremini or white button mushrooms, sliced
  • 3 cloves Garlic, minced
  • 1 cup Marsala wine
  • 0.5 cup Chicken broth
  • 0.25 cup Heavy cream
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the turkey or chicken cutlets with salt and black pepper on both sides.

Step 2

Dredge the cutlets in the flour, shaking off any excess. Set aside on a plate.

Step 3

Heat 1 tablespoon of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 4

Cook the cutlets in batches for 3-4 minutes per side, or until golden brown and just cooked through. Transfer to a plate and cover with foil to keep warm.

Step 5

In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.

Step 6

Add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until the mushrooms are golden and tender.

Step 7

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 8

Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.

Step 9

Add the chicken broth and heavy cream to the skillet, stirring to combine. Simmer for another 3-4 minutes until the sauce thickens slightly.

Step 10

Return the cooked cutlets to the skillet, spooning the sauce over them. Cook for 2 minutes to heat through.

Step 11

Sprinkle with fresh parsley, then serve the Turkey Marsala or Chicken warm with your choice of sides, such as mashed potatoes or roasted vegetables.
