Ingredients

  • 2 cups Elbow macaroni
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 Garlic cloves, minced
  • 2 small Carrots, diced
  • 2 Celery stalks, diced
  • 28 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 6 cups Chicken or vegetable broth
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Heavy cream (optional)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Cook the elbow macaroni in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 2

In a large soup pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, stirring occasionally, until the vegetables are slightly tender.

Step 4

Add the canned diced tomatoes, tomato paste, chicken or vegetable broth, dried basil, dried oregano, sugar, salt, and black pepper. Stir to combine.

Step 5

Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.

Step 6

Optional: If you prefer a creamier soup, stir in the heavy cream and cook for another 2-3 minutes.

Step 7

Add the cooked macaroni to the soup pot and stir until well combined. Let it heat through for 2-3 minutes.

Step 8

Taste and adjust the seasoning, adding more salt or pepper if needed.

Step 9

Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot and enjoy!
