  • 2 cups shredded rotisserie chicken

  • 0.5 teaspoons chili powder
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons butter
  • 0.5 cup sour cream (for serving)
  • 0.5 cup salsa (for serving)

Directions

Step 1

In a large mixing bowl, combine the shredded rotisserie chicken, diced bell pepper, diced red onion, chopped cilantro, ground cumin, chili powder, salt, and black pepper. Toss together until well combined.

Step 2

Heat a large skillet or griddle over medium heat and add the olive oil. Swirl to coat the pan evenly.

Step 3

Place a flour tortilla flat in the skillet and sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla.
