Ingredients

  • 1 whole fresh pineapple
  • 1 large cucumber
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 0.25 cup fresh cilantro
  • 1 medium lime
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel and core the pineapple, then dice it into bite-sized pieces and transfer to a large mixing bowl.

Step 2

Wash and peel the cucumber, then dice it into small cubes similar in size to the pineapple pieces. Add to the mixing bowl.

Step 3

Wash the red bell pepper, remove the seeds and core, and dice it finely. Add to the bowl.

Step 4

Peel and thinly slice half a red onion into very fine slivers. Add to the bowl.
