Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 1 14-ounce can Canned diced tomatoes
  • 6 cups Low-sodium chicken or vegetable broth
  • 2 14-ounce cans Canned cannellini beans, drained and rinsed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 cup Ditalini pasta
  • 0.25 cup Grated Parmesan cheese (optional, for serving)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 3

Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.

Step 4

Stir in the diced tomatoes, chicken or vegetable broth, cannellini beans, oregano, basil, thyme, salt, and pepper. Bring to a boil.

Step 5

Reduce the heat to low and let the soup simmer for 20 minutes, allowing the flavors to meld together.

Step 6

Meanwhile, in a separate pot, cook the ditalini pasta according to the package instructions. Drain and set aside.

Step 7

After the soup has simmered, taste and adjust seasonings if needed.

Step 8

Add the cooked pasta to the pot and stir to combine. Let the soup heat for 2-3 minutes to ensure the pasta is warm.

Step 9

Serve hot, garnished with freshly grated Parmesan cheese and chopped parsley, if desired.
