Ingredients

  • 1 cup Unsalted butter
  • 0.5 cup Granulated sugar
  • 2 cups All-purpose flour
  • 4 pieces Large eggs
  • 1.5 cups Granulated sugar
  • 0.25 cup All-purpose flour
  • 0.67 cup Lemons (freshly squeezed juice)
  • 0.25 cup Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

Step 2

In a medium bowl, cream together the butter and 1/2 cup of granulated sugar until light and fluffy. Add 2 cups of all-purpose flour and mix until a crumbly dough forms.

Step 3

Press the dough evenly into the prepared baking dish to form the shortbread crust. Use your fingers or the back of a spoon to compact it.

Step 4

Place the crust in the preheated oven and bake for 15-20 minutes, or until lightly golden brown. Remove from the oven and set aside to cool slightly.

Step 5

In a large mixing bowl, whisk together the eggs and 1 1/2 cups of granulated sugar until smooth and slightly pale. Add 1/4 cup of flour and whisk to combine.

Step 6

Gradually mix in the freshly squeezed lemon juice. Whisk until the mixture is well combined and smooth.

Step 7

Pour the lemon filling over the pre-baked crust, ensuring it spreads evenly.

Step 8

Return the baking dish to the oven and bake for 20-25 minutes, or until the lemon filling is set and no longer jiggles in the center.

Step 9

Remove the lemon bars from the oven and allow them to cool completely in the baking dish. Once cool, refrigerate for at least 1 hour for easier slicing.

Step 10

Before serving, dust the top generously with powdered sugar. Slice into squares or rectangles and enjoy!
