Ingredients

  • 2 bunches collard greens
  • 1 bunch mustard greens
  • 1 pound smoked turkey wings
  • 1 large yellow onion
  • 4 pieces garlic cloves
  • 6 cups chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cups water

Directions

Step 1

Rinse the collard greens and mustard greens thoroughly under cold water to remove any dirt or grit.

Step 2

Remove the tough stems from the greens and chop the leaves into roughly 2-inch pieces. Set aside.

Step 3

Heat olive oil in a large pot over medium heat. Add the smoked turkey wings and sear for 5 minutes on each side until lightly browned.

Step 4

Peel and dice the onion and mince the garlic cloves. Add them to the pot with the turkey wings and sauté for 3-4 minutes until fragrant.

Step 5

Pour in the chicken broth and water, then stir in the apple cider vinegar, sugar, red pepper flakes, salt, and black pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let the turkey simmer for 20 minutes to release its flavor.

Step 7

Add the chopped collard and mustard greens to the pot, a handful at a time, stirring to allow them to wilt and fit into the pot.

Step 8

Cover the pot and simmer on low heat for 60-70 minutes, stirring occasionally. Ensure the greens are tender and infused with the flavors of the broth.

Step 9

Taste the greens and adjust seasoning with additional salt or pepper if needed.

Step 10

Serve hot as a side dish or enjoy it on its own for a hearty, flavorful meal.
