Ingredients

  • 3 cups Rolled oats
  • 1 cup Almonds, chopped
  • 1 cup Pecans, chopped
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.75 cup Dried cranberries
  • 0.75 cup Raisins

Directions

Step 1

Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, chopped pecans, pumpkin seeds, sunflower seeds, shredded coconut, ground cinnamon, and salt. Mix well.

Step 3

In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully combined.

Step 4

Pour the wet ingredients over the dry ingredients and stir thoroughly until all the dry ingredients are evenly coated.

Step 5

Spread the granola mixture evenly onto the prepared baking sheet in a thin, even layer.

Step 6

Bake for 25-30 minutes, stirring halfway through to ensure even toasting. Keep a close eye on it during the last 5 minutes to prevent burning.

Step 7

Remove the baking sheet from the oven and let the granola cool completely on the sheet without disturbing it. This helps it form clusters.

Step 8

Once the granola has cooled, stir in the dried cranberries and raisins.

Step 9

Store the granola in an airtight container at room temperature for up to two weeks. Enjoy it on its own, with milk, or as a topping for yogurt or smoothie bowls.
