Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract for frosting
  • 2 tablespoons milk
  • 0 food coloring (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes using a hand or stand mixer.

Step 3

Add 1 large egg and 2 teaspoons of vanilla extract to the butter mixture. Beat until well combined.

Step 4

In a separate bowl, whisk together 2.5 cups of all-purpose flour, 1 teaspoon of baking powder, and 0.25 teaspoon of salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If the dough is too soft, refrigerate for 15-20 minutes.

Step 6

Roll the dough out on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.

Step 7

Bake for 8-10 minutes, or until the edges are just starting to turn golden. Remove from the oven and let cookies cool completely on a wire rack.

Step 8

To make the buttercream frosting, beat 1 cup of softened unsalted butter in a large bowl until creamy.

Step 9

Gradually add 4 cups of powdered sugar, 1 cup at a time, mixing well after each addition.

Step 10

Mix in 2 teaspoons of vanilla extract and 2 tablespoons of milk. Beat until the frosting is smooth and fluffy. If desired, add food coloring to tint the frosting.

Step 11

Once the cookies are completely cool, spread or pipe the buttercream frosting onto each cookie. Decorate with sprinkles, if desired.

Step 12

Allow the frosting to set slightly before serving. Store the cookies in an airtight container for up to 5 days.
