Ingredients

  • 500 g All-purpose flour
  • 50 g Granulated sugar
  • 1 tsp Salt
  • 7 g Active dry yeast
  • 120 ml Whole milk (lukewarm)
  • 100 g Unsalted butter (softened)
  • 3 pieces Large eggs
  • 200 g Dark chocolate (chopped)
  • 1 piece Egg yolk (for egg wash)
  • 1 tbsp Whole milk (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well to distribute the ingredients evenly.

Step 2

In a small bowl, dissolve the active dry yeast in the lukewarm whole milk. Let it sit for 5–10 minutes until frothy.

Step 3

Add the yeast mixture, softened butter, and eggs to the dry ingredients. Mix until a shaggy dough forms.

Step 4

Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6–8 minutes.

Step 5

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and allow it to rise in a warm environment for 1–2 hours or until doubled in size.

Step 6

Once the dough has risen, punch it down to release air. Roll it out on a floured surface into a rectangle approximately 40x30 cm (16x12 inches).

Step 7

Evenly spread the chopped dark chocolate across the surface of the dough, leaving a small border around the edges. Gently press the chocolate into the dough.

Step 8

Roll the dough tightly along the long edge to create a log. Use a sharp knife to cut the log into 12 equal pieces.

Step 9

Arrange the pieces in a greased or parchment-lined round cake tin, placing them slightly apart so they have room to expand. Cover the tin loosely with a kitchen towel and let the dough rise for another 30 minutes.

Step 10

Preheat your oven to 180°C (350°F).

Step 11

In a small bowl, whisk together the egg yolk and milk for the egg wash. Brush the brioche with the egg wash to ensure a golden, glossy finish.

Step 12

Bake in the preheated oven for 20–25 minutes, or until the brioche is golden brown and fragrant.

Step 13

Remove the brioche from the oven and let it cool in the tin for 10 minutes. Carefully transfer it to a wire rack to cool fully.

Step 14

Serve warm or at room temperature, allowing guests to tear off pieces to enjoy the soft, chocolate-filled brioche.
