  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Add the chicken thighs to the pot and sear for 3-4 minutes per side, until golden brown. Remove the chicken and set aside.

In the same pot, add the diced onion, sliced carrots, and celery. Sauté for 5-6 minutes until the vegetables are slightly softened.
