Ingredients

  • 3 lbs beef chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large (sliced) yellow onion
  • 4 minced garlic cloves
  • 4 medium (peeled and cut into chunks) carrots
  • 4 medium (quartered) red potatoes
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.

In the same skillet, add the sliced onions and minced garlic. Sauté for 2-3 minutes until softened and fragrant. Remove from heat.
