Ingredients

  • 400 g Rice noodles
  • 400 ml Coconut milk
  • 1 liter Chicken or prawn stock
  • 300 g Cooked shredded chicken
  • 200 g Prawns, peeled and deveined
  • 100 g Laksa paste
  • 150 g Bean sprouts
  • 3 pieces Hard-boiled eggs, halved
  • 30 g Fresh coriander leaves, chopped
  • 2 pieces Lime, cut into wedges
  • 2 tbsp Fish sauce
  • 1 tsp Sugar
  • 1 tsp Salt
  • 2 tbsp Oil

Directions

Step 1

Soak the rice noodles in hot water for about 10 minutes, or until softened. Drain and set aside.

In a large pot, heat the oil over medium heat. Add the laksa paste and sauté for about 2 minutes until aromatic.

Pour in the chicken or prawn stock and bring to a simmer. Stir well to combine the laksa paste with the liquid.
