In a large mixing bowl, whisk together the all-purpose flour, sugar, and salt until combined.
In a separate bowl, beat the eggs and then whisk in the milk and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, whisking constantly, until a smooth, lump-free batter forms. The batter should be slightly thinner than pancake batter. Add a little more milk if necessary.
Heat a large non-stick skillet or crepe pan over medium heat and lightly grease it with butter.
