Ingredients

  • 2 medium roots (about 1.5 pounds) malanga
  • 1 can (15 ounces), drained and rinsed black beans
  • 1 medium, diced red bell pepper
  • 1 medium, diced yellow bell pepper
  • 0.5 medium, finely chopped red onion
  • 0.5 cup, chopped cilantro
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the malanga and cut it into 1-inch cubes.

Step 2

Bring a medium pot of salted water to a boil. Add the malanga cubes and cook for 12-15 minutes, or until tender when pierced with a fork. Drain and set aside to cool.

Step 3

In a large mixing bowl, combine the black beans, diced red and yellow bell peppers, chopped red onion, and chopped cilantro.
