Ingredients

  • 250 grams Blanched almonds
  • 150 grams Powdered sugar
  • 2 large Eggs
  • 2 tablespoons Orange blossom water
  • 100 grams Fine granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.

Step 2

Using a food processor, grind the blanched almonds into a fine powder. Be careful not to over-process, as this can release the oils and turn the almonds into a paste.

Step 3

In a large mixing bowl, combine the almond powder, powdered sugar, and 1 tablespoon of orange blossom water. Mix well.

Step 4

Lightly beat one of the eggs and gradually add it to the almond mixture while kneading with your hands. Continue kneading until the dough comes together and is smooth and pliable. Add a little more beaten egg if necessary, but do not make the dough too sticky.

On a clean surface, roll the dough into long, thin logs about 2 cm (3/4 inch) in diameter.

Cut the logs into diamond-shaped pieces, each about 3 cm (1 1/4 inches) long.

Place the diamond-shaped pieces onto the prepared baking sheet, leaving a small space between each piece.

Bake the almond cakes in the preheated oven for 15-20 minutes, or until they are firm to the touch but still pale (do not let them brown). Remove them from the oven and let them cool completely on a wire rack.

Once cooled, brush the almond cakes lightly with the remaining orange blossom water.

Roll each piece in fine granulated sugar to coat evenly.
