Ingredients

  • 4 pounds Russet potatoes
  • 2 teaspoons Salt
  • 6 tablespoons Unsalted butter
  • 8 ounces Cream cheese
  • 1 cup Sour cream
  • 0.5 cup Whole milk
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.5 cup Grated Parmesan cheese
  • 0.5 teaspoon Paprika
  • 2 tablespoons Chopped fresh chives (optional)

Directions

Step 1

Peel and cut the Russet potatoes into evenly sized chunks. Place them in a large pot and cover with cold water.

Step 2

Add 1 teaspoon of salt to the water and bring it to a boil over medium-high heat. Reduce the heat to a simmer and cook the potatoes for 15-20 minutes, or until fork-tender.

Step 3

Preheat the oven to 350°F (175°C) if you plan to bake the casserole immediately.

Step 4

Drain the potatoes and return them to the pot. Mash the potatoes until smooth using a potato masher or ricer.

Step 5

In a small saucepan over low heat, melt the butter. Stir in the cream cheese, sour cream, and milk until smooth and well combined.

Step 6

Pour the butter mixture into the mashed potatoes. Add garlic powder, black pepper, and the remaining 1 teaspoon of salt. Mix until fully incorporated.

Step 7

Grease a 9x13-inch casserole dish with butter or non-stick spray. Spread the mashed potato mixture evenly in the dish.

Step 8

Sprinkle the grated Parmesan cheese evenly over the top. For added flavor, sprinkle a light dusting of paprika over the cheese.

Step 9

If making ahead, cover the casserole tightly with aluminum foil and refrigerate for up to 2 days.

Step 10

When ready to bake, remove the casserole from the refrigerator and let it sit at room temperature for 20-30 minutes. Bake, uncovered, in the preheated oven for 30-35 minutes, or until heated through and the top is lightly golden.

Step 11

Garnish with chopped fresh chives, if desired, before serving.
