Ingredients

  • 4 lbs Russet potatoes
  • 1 cup Butter
  • 1 cup Whole milk
  • 1 cup Sour cream
  • 2 cups Cheddar cheese, shredded
  • 1 cup Cooked bacon, crumbled
  • 0.25 cup Green onions, chopped
  • 1 tbsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Peel and chop the potatoes into even-sized chunks. Place them in a large pot of cold, salted water.

Bring the pot to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

Step 3

Drain the potatoes and return them to the pot. Mash them using a potato masher or ricer until smooth.

In a saucepan over medium heat, melt the butter and pour in the milk. Once warm, add the mixture to the mashed potatoes and stir until fully combined and creamy.

Stir in the sour cream, 1 1/2 cups of shredded cheddar cheese, salt, and black pepper. Mix well to distribute the flavors evenly.
