Ingredients

  • 12 large eggs
  • 0.25 cups milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 pounds breakfast sausage (crumbled and cooked)
  • 1 cups shredded cheddar cheese
  • 1 cups diced bell peppers
  • 0.5 cups diced onions
  • 10 large flour tortillas
  • 1 as needed non-stick cooking spray

Directions

Step 1

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully blended.

Step 2

Heat a large non-stick skillet over medium heat and spray with non-stick cooking spray. Pour the egg mixture into the skillet and cook, stirring frequently, until the eggs are scrambled and cooked through. Transfer to a separate bowl and set aside.

Step 3

In the same skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain excess grease if necessary.

Add the diced bell peppers and onions to the skillet with the sausage and cook for 3-4 minutes, or until softened.
