Ingredients

  • 20 pieces White button mushrooms (medium-sized)
  • 4 ounces Cream cheese, softened
  • 1 cup Cheddar cheese, shredded
  • 6 slices Cooked bacon, crumbled
  • 2 tablespoons Green onions, finely chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Salt (optional)
  • 2 tablespoons Breadcrumbs (optional, for topping)
  • 1 tablespoon Olive oil (for greasing the pan)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish or sheet with olive oil and set aside.

Step 2

Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems and set the hollowed caps aside. Finely chop the stems and save them for the filling.

Step 3

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped mushroom stems, green onions, garlic powder, black pepper, and salt (if using). Mix until well combined.

Step 4

Using a small spoon, carefully stuff each mushroom cap with the filling, mounding it slightly on top.

Step 5

Place the stuffed mushrooms in the prepared baking dish, ensuring they’re arranged closely but not touching.

Step 6

If desired, sprinkle breadcrumbs over the tops of the stuffed mushrooms for added crunch.

Step 7

At this point, you can cover and refrigerate the mushrooms for up to 24 hours if making ahead.

Step 8

When ready to bake, place the mushrooms in the preheated oven and bake for 18-20 minutes, or until the mushrooms are tender and the filling is bubbly and golden on top.

Step 9

Remove from the oven and let cool for a few minutes before serving. Enjoy!
