Preheat the oven to 200°C (390°F) or 180°C (fan) and grease a 12-hole tart tin.
Roll out the puff pastry on a lightly floured surface to about 2-3mm thickness. Use a round cookie cutter (approximately 10cm in diameter) to cut out 12 circles.
Gently press each circle of pastry into the greased tart tin, ensuring the edges come up the sides to form a case. Place the tin in the refrigerator while preparing the filling.
In a large mixing bowl, beat the ricotta cheese, ground almonds, and caster sugar until smooth.
Melt the unsalted butter and allow it to cool slightly. Mix the melted butter into the filling mixture.
Add the egg yolks, lemon zest, and vanilla extract to the mixture, and stir until well combined.
Sift the plain flour into the mixture and fold it in gently. Lastly, add the milk to loosen the filling to a smooth, spoonable consistency.
Remove the tart tin from the refrigerator and spoon the filling evenly into the puff pastry cases, filling each about 3/4 full.
Bake the tarts in the preheated oven for 18-20 minutes, or until the pastry is golden and the filling is set with a slight wobble in the center.
Remove the tart tin from the oven and allow the tarts to cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the Maids of Honour with icing sugar before serving.
