Ingredients

  • 200 g Plain flour
  • 100 g Unsalted butter (cold, cubed)
  • 30 g Powdered sugar
  • 1 unit Egg yolk
  • 2 tbsp Cold water
  • 100 g Cream cheese (softened)
  • 50 g Granulated sugar
  • 0.5 tsp Almond extract
  • 4 tbsp Raspberry jam
  • 1 unit Egg (beaten)
  • 50 g Ground almonds

Directions

Step 1

Preheat your oven to 200°C (400°F) and grease a 12-hole tart tin.

Step 2

In a large bowl, combine the plain flour and powdered sugar. Add the cold, cubed butter and rub together with your fingertips until the mixture resembles fine breadcrumbs.

Step 3

Stir in the egg yolk and cold water, then knead gently to form a smooth dough. Wrap in cling film and refrigerate for 20 minutes.

Step 4

On a lightly floured surface, roll out the chilled dough to about 3mm thickness. Use a round cutter to cut out circles and press each into the prepared tart tin. Chill the tart shells in the fridge while preparing the filling.

Step 5

In a medium bowl, beat the softened cream cheese and granulated sugar until smooth. Mix in the almond extract, ground almonds, and beaten egg to create the filling.

Step 6

Remove the tart shells from the fridge. Place half a teaspoon of raspberry jam in the bottom of each shell, then spoon the almond filling on top until just below the rim.

Step 7

Bake the tarts in the preheated oven for 15-20 minutes or until the filling is golden and set.

Step 8

Allow the tarts to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before serving.
