Ingredients

  • 2 cups All-purpose flour

  • 0.5 cups Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1.5 cups Grated zucchini (unpeeled)
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easier release.

Step 2

In a medium mixing bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
