  • 0.5 cups Vegetable oil
  • 0.33 cups Milk
  • 1 teaspoon Vanilla extract
  • 2 pieces Large eggs
  • 1.5 cups Grated carrots (firmly packed)
  • 0.5 cups Chopped walnuts or pecans (optional)
  • 0.5 cups Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt until well combined. Set aside.
