Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 3 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 2 tbsp Lemon juice
  • 1 tsp Paprika
  • 0.5 tsp Cayenne pepper
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh cilantro, chopped (for aioli)
  • 0.5 cup Mayonnaise
  • 1 tbsp Lime juice
  • 1 clove Garlic, minced (for aioli)
  • 0.25 tsp Salt (for aioli)
  • 1 as needed Cooking spray or oil for grill

Directions

Step 1

In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, cayenne pepper, salt, and black pepper. Mix well to make the marinade.

Step 2

Add the peeled and deveined shrimp to the marinade. Toss to coat evenly, cover the bowl, and refrigerate for at least 15 minutes, or up to 1 hour for deeper flavor.

Step 3

While the shrimp is marinating, prepare the cilantro aioli by blending or whisking chopped cilantro, mayonnaise, lime juice, minced garlic, and salt in a small bowl until smooth. Cover and refrigerate until ready to serve.

Step 4

Preheat a grill or grill pan to medium-high heat. Lightly grease the grill grates with cooking spray or oil to prevent sticking.

Step 5

Thread the marinated shrimp onto skewers, leaving a small gap between each shrimp for even cooking.

Step 6

Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Avoid overcooking, as the shrimp can become rubbery.

Step 7

Remove the shrimp from the grill and place on a serving platter. Serve hot alongside the cilantro aioli for dipping.
