Rinse the mahi mahi fillets under cold water and pat them dry with a paper towel. Season both sides evenly with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add two mahi mahi fillets to the pan and sear for 3-4 minutes per side, or until golden brown and cooked through. Repeat with the remaining fillets using the second tablespoon of olive oil. Set the cooked fillets aside and cover with foil to keep warm.
