  • 1 cup red lentils, rinsed and drained
  • 6 cups vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onions and sauté for 3-4 minutes until they begin to soften and turn translucent.
