Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 0.5 cup Light brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (or substitute with chocolate chips or dried cranberries)
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

In a small bowl, combine the rolled oats and milk. Let this mixture sit for 10–15 minutes to allow the oats to soften.

Step 3

In a separate large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.

Step 4

In another bowl, whisk together the melted butter, light brown sugar, egg, and vanilla extract until smooth and well combined.

Step 5

Add the softened oat mixture into the wet ingredients and stir to combine.

Step 6

Gradually fold the wet mixture into the dry ingredients, being careful not to overmix. Stir just until you no longer see dry flour patches.

Step 7

Gently fold in the raisins (or other add-ins) and chopped walnuts, if using.

Step 8

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 9

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Store any leftovers in an airtight container for up to 3 days.
