Ingredients

  • 1 cup Whole wheat flour
  • 1 cup Bran cereal
  • 0.5 cup Rolled oats
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 large Bananas (ripe, mashed)
  • 1 medium Apples (peeled, grated)
  • 0.5 cup Raisins
  • 1 Egg
  • 0.75 cup Milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a large mixing bowl, combine the whole wheat flour, bran cereal, rolled oats, brown sugar, baking soda, baking powder, ground cinnamon, and salt. Mix well to ensure an even distribution of dry ingredients.

Step 3

In another bowl, mash the bananas until smooth. Add the grated apple, raisins, egg, milk, vegetable oil, and vanilla extract. Stir until the wet ingredients are fully combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture until just combined. Be careful not to overmix, as this can result in dense muffins.

Step 5

Evenly distribute the batter into the prepared muffin tin, filling each cup about three-quarters full.

Step 6

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 8

Enjoy these magical muffins warm or at room temperature. They can be stored in an airtight container for up to 3 days or frozen for longer storage.
