  • 1 stalk celery, diced
  • 1 medium potato, peeled and cubed
  • 3 cups vegetable broth
  • 0.5 cup heavy cream
  • 0.75 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons grated Parmesan cheese (optional)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Stir in the minced garlic, diced carrot, and celery. Cook for another 2-3 minutes until fragrant.

Add the cubed potato and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes or until all the vegetables are tender.
