Ingredients

  • 500 grams Kumquats
  • 750 milliliters Vodka
  • 300 grams Granulated sugar
  • 350 milliliters Water
  • 1 piece Vanilla bean

Directions

Step 1

Rinse the kumquats thoroughly under cold water to remove any dirt or residue.

Step 2

Slice the kumquats in half lengthwise and remove any seeds. Do not discard the peels as they provide flavor and color.

Step 3

In a large, clean glass jar or container (at least 1.5 liters in capacity), place the halved kumquats.

Step 4

Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the bean pod to the jar.

Step 5

Pour the vodka over the kumquats and vanilla bean, making sure the kumquats are completely submerged. Seal the jar tightly with a lid.

Step 6

Store the jar in a cool, dark place for 2 weeks, shaking gently every 2-3 days to enhance the infusion process.

Step 7

After 2 weeks, prepare a simple syrup by combining the sugar and water in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Let the syrup cool to room temperature.

Step 8

Strain the kumquat-infused vodka through a fine mesh strainer or cheesecloth, discarding the kumquat solids and vanilla bean.

Step 9

Combine the strained vodka with the cooled simple syrup. Mix well, then transfer the liqueur to clean, sterilized bottles or jars with tight-fitting lids.

Step 10

Allow the liqueur to rest for at least another week in a cool, dark place to mellow the flavors before serving. Shake the bottle gently before use.

Step 11

Serve chilled, over ice, or as a cocktail ingredient. Enjoy responsibly!
