Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 1 cups Granulated sugar
  • 2 Large eggs
  • 0.25 cups Fresh lemon juice
  • 2 tablespoons Lemon zest
  • 0.5 cups Whole milk
  • 1 cups Powdered sugar
  • 2 tablespoons Fresh lemon juice (for glaze)
  • 2 tablespoons Granulated sugar (for lemon sugar topping)
  • 1 teaspoon Lemon zest (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Stir in the lemon juice and lemon zest.

Step 5

Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Step 8

While the cake is baking, prepare the lemon sugar glaze by whisking together powdered sugar and fresh lemon juice in a small bowl until smooth.

Step 9

In another small bowl, combine the granulated sugar and lemon zest for the lemon sugar topping and set aside.

Step 10

Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 11

When the cake is cool, drizzle the lemon sugar glaze evenly over the top, allowing it to slightly drip down the sides.

Step 12

Sprinkle the lemon sugar topping over the glazed cake for a crunchy, citrusy finishing touch.

Step 13

Slice and serve! Enjoy your Maggie's Lemon Sugar Cake with a cup of tea or coffee.
