Ingredients

  • 15 pieces Digestive biscuits
  • 15 pieces Marshmallows
  • 15 pieces Glacé cherries
  • 0.2 liters Sweetened condensed milk
  • 50 grams Desiccated coconut

Directions

Step 1

Crush the digestive biscuits into fine crumbs by placing them in a sealed plastic bag and using a rolling pin, or pulse them in a food processor.

Step 2

Cut the marshmallows and glacé cherries into small pieces to make them easier to mix and distribute evenly.

Step 3

In a large mixing bowl, combine the crushed biscuits, chopped marshmallows, and cherries.

Step 4

Pour the sweetened condensed milk gradually into the mixture, stirring as you go, until it comes together in a sticky dough-like consistency.

Step 5

Lightly dust a clean surface with some of the desiccated coconut. Place the mixture on the surface and shape it into a log approximately 10-12 inches (25-30 cm) long.

Step 6

Roll the log in the remaining desiccated coconut to coat it evenly on all sides.

Step 7

Wrap the log tightly in cling film and refrigerate for at least 2 hours, or until firm.

Step 8

Once chilled, slice the log into 1-inch (2.5 cm) thick pieces to serve. Store the slices in an airtight container in the refrigerator for up to one week.
