  • 1 cup Frozen corn
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 pieces Large flour tortillas
  • 1.5 cups Shredded cheddar cheese
  • 0.25 cup Fresh cilantro, chopped
  • 2 pieces Lime wedges, for garnish
  • 0.5 cup Sour cream, for serving

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for 1 more minute.

Step 2

Add chicken breasts to the pot and pour in chicken broth and canned diced tomatoes with green chilies. Stir in cumin, chili powder, paprika, salt, and black pepper. Cover and let simmer for 15 minutes or until the chicken is cooked through.

Step 3

Remove chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
