Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.75 cups chicken broth
  • 0.25 cups fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • 4 slices lemon slices (optional garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.

Step 2

Season both sides of the chicken breasts with half of the salt and black pepper.

Step 3

Pour the flour onto a large plate or shallow dish. Dredge each chicken breast in the flour, shaking off any excess.

Heat 2 tablespoons of butter and the olive oil in a large skillet over medium heat.
