Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 2 medium Carrots, sliced into rounds
  • 2 stalks Celery stalks, diced
  • 3 medium Potatoes, cubed
  • 1 medium Zucchini, diced
  • 2 tablespoons Tomato paste
  • 14 ounces Diced tomatoes, canned
  • 4 cups Chicken or vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 2 leaves Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Step 2

Add the Italian sausages and cook for 8–10 minutes, turning occasionally, until browned on all sides. Remove the sausages and set aside.

Step 3

In the same pot, heat the remaining 1 tablespoon olive oil. Add the diced onion and sauté for 3–4 minutes until translucent.

Step 4

Stir in the minced garlic, carrots, and celery. Cook for another 3 minutes until the vegetables begin to soften.

Step 5

Add the cubed potatoes and zucchini to the pot, stirring to combine with the other vegetables.

Step 6

Stir in the tomato paste, ensuring the vegetables are well coated.

Step 7

Pour in the canned diced tomatoes and chicken (or vegetable) broth. Stir well to combine.

Step 8

Slice the cooked sausages into bite-sized pieces and return them to the pot.

Add the dried thyme, dried oregano, smoked paprika, bay leaves, salt, and black pepper. Stir well.

Step 10

Bring the stew to a boil, then reduce the heat to low and simmer uncovered for 30 minutes, or until the potatoes are tender and the flavors have melded together.

Remove the bay leaves before serving.

Garnish each bowl with fresh parsley and serve hot, optionally with crusty bread on the side.
