Ingredients

  • 450 grams Okra (fresh, trimmed and halved lengthwise)
  • 4 tablespoons Vegetable oil
  • 2 teaspoons Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Ground fennel seeds
  • 1 teaspoon Salt
  • 1.5 teaspoons Sugar
  • 3 teaspoons White vinegar
  • 1 medium Tomato (finely chopped)
  • 1 medium Green chili (finely chopped)

Directions

Step 1

Wash the okra thoroughly and pat them dry with a kitchen towel. Trim the tops and tails, then slice them in half lengthwise.

Step 2

Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Add the okra in batches to prevent overcrowding. Fry the okra for 8–10 minutes, turning occasionally, until lightly browned and tender. Set aside on a paper towel-lined plate to drain any excess oil.

Step 3

In the same skillet, heat the remaining 2 tablespoons of oil over medium heat. Add the ground coriander, ground cumin, turmeric powder, and ground fennel seeds. Stir for about 30 seconds until fragrant.

Step 4

Add the chopped tomato and green chili to the skillet. Cook for 3–4 minutes, stirring frequently, until the tomatoes are soft and well-incorporated into the spice mixture.

Step 5

Stir in the salt, sugar, and white vinegar, adjusting the sweetness and tanginess to your preference.

Step 6

Return the fried okra to the skillet and gently toss to coat them evenly with the spice mixture. Cook for another 5–7 minutes on low heat, stirring occasionally, until the okra absorbs the flavors.
