Ingredients

  • 1 cup Corned beef
  • 1 cup Sauerkraut
  • 1 cup Swiss cheese
  • 0.5 cup Thousand Island dressing
  • 12 sheets Egg roll wrappers
  • 1 large Egg (beaten for sealing)
  • 3 cups Vegetable oil (for frying)

Directions

Step 1

In a mixing bowl, combine the corned beef, sauerkraut, and Swiss cheese. Mix well to evenly distribute the ingredients.

Step 2

Lay out the egg roll wrappers on a clean, dry surface. Place about 2 tablespoons of the filling mixture in the center of each wrapper.

Step 3

Drizzle a small amount of Thousand Island dressing over the filling (about 1 teaspoon per roll).

Step 4

Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly around the filling, forming a neat roll.

Step 5

Brush the beaten egg along the top edge of the wrapper to seal it, ensuring it stays closed during frying.

Step 6

Repeat the process for all the remaining egg roll wrappers and filling.

Step 7

In a deep skillet or frying pot, heat the vegetable oil to 350°F (175°C). Test the oil temperature using a thermometer to ensure even frying.

Step 8

Carefully add a few Reuben rolls to the hot oil at a time, making sure not to overcrowd the pot. Fry each roll for 2-3 minutes or until golden brown and crispy.

Step 9

Remove the rolls from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Step 10

Serve hot with extra Thousand Island dressing on the side for dipping.
