Ingredients

  • 115 grams Unsalted butter
  • 130 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 120 grams Granulated sugar
  • 3 pieces Large eggs
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Lemon zest
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Melt the butter in a small saucepan or microwave-safe bowl. Set aside to cool slightly.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed for 5 minutes, or until the mixture is pale, thick, and fluffy.

Step 4

Add the vanilla extract and lemon zest to the egg mixture and gently mix to combine.

Step 5

Gradually fold the dry ingredients (flour mixture) into the wet ingredients (egg mixture) using a rubber spatula. Be gentle to avoid deflating the batter.

Step 6

Slowly drizzle in the melted butter, folding gently until fully incorporated.

Step 7

Cover the bowl with plastic wrap and refrigerate for 1 hour. This step is essential for achieving the characteristic hump of madeleines.

Step 8

Preheat the oven to 375°F (190°C). Grease a madeleine pan with butter and lightly dust with flour to prevent sticking.

Step 9

Spoon approximately 1 tablespoon of batter into the center of each madeleine mold. The batter will spread as it bakes, so avoid overfilling.

Step 10

Bake in the preheated oven for 8–10 minutes, or until the madeleines are golden around the edges and spring back lightly when touched.

Step 11

Remove the pan from the oven and let the madeleines cool in the pan for 2 minutes before transferring to a wire rack to cool completely.

Step 12

Optional: Dust the cooled madeleines with powdered sugar before serving.
