Ingredients

  • 2 cups long-grain white rice
  • 4 cups water
  • 2 tablespoons butter
  • 0.5 pounds ground pork
  • 0.5 pounds chicken livers, finely chopped
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 stalks green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear. In a medium pot, bring the 4 cups of water to a boil. Add the rice and reduce the heat to low. Cover and cook for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and set aside.

Step 2

In a large skillet or Dutch oven, melt the butter over medium heat. Add the ground pork and cook, stirring frequently, until browned and cooked through, about 5-7 minutes.

Step 3

Add the chopped chicken livers to the skillet. Cook for another 5 minutes, breaking them down into small pieces as they cook.

Step 4

Stir in the diced onion, bell pepper, and celery. Cook until the vegetables are softened, about 5-7 minutes.

Step 5

Add the minced garlic and cook for 1 minute, until fragrant.

Step 6

Sprinkle in the Cajun seasoning, paprika, thyme, salt, and black pepper. Stir well to evenly coat the meat and vegetables with the spices.

Step 7

Add the cooked rice to the skillet and stir to combine. Cook everything together for another 5 minutes, allowing the flavors to meld.

Step 8

Remove from heat and stir in the green onions and fresh parsley.

Step 9

Serve hot as a side dish or a main course, garnished with additional parsley if desired.
