Ingredients

  • 6 cups Chicken broth
  • 3 tablespoons Soy sauce
  • 3 tablespoons Rice vinegar
  • 2 teaspoons Chili garlic sauce
  • 0.5 teaspoons White pepper
  • 2 tablespoons Cornstarch
  • 3 tablespoons Water
  • 8 ounces Firm tofu (cut into thin strips)
  • 1 cup Shiitake mushrooms (thinly sliced, fresh or rehydrated dried)
  • 1 cup Bamboo shoots (julienned, canned and drained)
  • 1 large Egg
  • 1 teaspoon Sesame oil
  • 2 tablespoons Green onions (sliced for garnish)
  • 2 tablespoons Fresh cilantro (chopped for garnish, optional)
  • 1 cup Cooked shredded chicken (optional)

Directions

Step 1

In a large pot, bring the chicken broth to a boil over medium heat.

Step 2

Stir in the soy sauce, rice vinegar, chili garlic sauce, and white pepper. Adjust the seasoning to taste, adding more soy sauce or vinegar if desired.

Step 3

In a small bowl, mix the cornstarch and water to create a slurry. Slowly pour this into the soup while stirring continuously to thicken the broth slightly.

Step 4

Add the tofu, shiitake mushrooms, bamboo shoots, and optional shredded chicken. Simmer on medium-low heat for about 5-7 minutes to allow the flavors to meld.

Step 5

Crack the egg into a small bowl and whisk lightly. Slowly drizzle the egg into the soup while stirring gently with a fork to create ribbons of cooked egg.

Step 6

Remove the pot from heat and stir in the sesame oil for added depth of flavor.

Step 7

Ladle the soup into bowls and garnish with sliced green onions and chopped cilantro, if using.

Step 8

Serve hot and enjoy your homemade Madame Wong’s Hot and Sour Soup!
