  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 tablespoon Vital wheat gluten (optional, for better rise)

Directions

Step 1

In a small bowl or measuring cup, dissolve the active dry yeast and honey into the warm water. Let it sit for 5-10 minutes, or until it becomes frothy.

Step 2

In a large mixing bowl (or the bowl of a stand mixer), combine the whole wheat flour, semolina flour, salt, and vital wheat gluten if using.

Step 3

Pour the yeast mixture and olive oil into the dry ingredients. Mix until a shaggy dough forms.

Step 4

Knead the dough for 8-10 minutes by hand on a lightly floured surface, or use a stand mixer with a dough hook for 5-6 minutes, until the dough is smooth and elastic.
