Ingredients

  • 1 cup (cooked) Macaroni
  • 1 cup (small, chopped) Broccoli florets
  • 4 Eggs
  • 2 tablespoons Milk
  • 1 cup (shredded) Cheddar cheese
  • 2 teaspoons Olive oil
  • 1 teaspoon Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Garlic powder
  • 1 tablespoon (chopped, optional for garnish) Parsley

Directions

Step 1

Cook macaroni according to package instructions, drain, and set aside.

Step 2

Steam or blanch the chopped broccoli florets until slightly tender but still vibrant green. Set aside.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.

Step 4

Heat 1 teaspoon of olive oil and the butter in a medium non-stick skillet over medium heat. Swirl to coat the pan evenly.

Step 5

Add the cooked macaroni and broccoli to the skillet. Sauté for 1-2 minutes until heated through.

Step 6

Reduce the heat to low, and pour the egg mixture evenly over the macaroni and broccoli. Tilt the pan to spread the eggs out if needed.

Step 7

Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.

Step 8

Cover the skillet with a lid and let the omelet cook on low heat for about 8-10 minutes, or until the eggs are fully set and the cheese is melted.

Step 9

Carefully slide the omelet onto a plate, or fold it in half if desired.

Step 10

Garnish with chopped parsley, if using, and serve warm.
