Ingredients

  • 225 grams Whole-grain macaroni
  • 480 milliliters Unsweetened almond milk
  • 120 grams Low-fat shredded cheddar cheese
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Cornstarch
  • 1 tablespoon Olive oil spread (low cholesterol)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil and cook the whole-grain macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

While the macaroni is cooking, prepare the cheese sauce. In a medium saucepan, combine the unsweetened almond milk and low-fat shredded cheddar cheese over medium heat.

Step 3

Stir continuously until the cheese begins to melt, ensuring the mixture doesn’t stick to the pan.

Step 4

In a small bowl, whisk together the nutritional yeast and cornstarch with 2 tablespoons of water to form a smooth slurry.

Step 5

Pour the cornstarch slurry into the saucepan, and continue stirring until the sauce thickens, about 2-3 minutes.

Step 6

Add the olive oil spread, Dijon mustard, garlic powder, onion powder, salt, and black pepper to the saucepan. Stir well to incorporate the flavors.

Step 7

Reduce the heat to low and allow the sauce to simmer gently for 2-3 minutes, stirring occasionally.

Step 8

Combine the cooked macaroni with the cheese sauce, mixing well to ensure the pasta is evenly coated.

Step 9

Serve immediately, garnished with fresh parsley if desired.
