Ingredients

  • 170 grams Unsalted butter
  • 200 grams Light brown sugar
  • 50 grams Granulated sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 200 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 120 grams Macadamia nuts (roughly chopped)
  • 120 milliliters Heavy cream
  • 80 milliliters Pure maple syrup
  • 30 grams Unsalted butter (for topping)
  • 100 grams Light brown sugar (for topping)
  • 0.5 teaspoons Sea salt (optional, for garnish)

Directions

Step 1

Preheat the oven to 175°C (350°F) and line a 9x9-inch (23x23 cm) baking pan with parchment paper, leaving an overhang on two sides for easy removal.

Step 2

Melt the butter in a medium saucepan over low heat or in the microwave, then transfer it to a large mixing bowl. Allow it to cool slightly.

Step 3

Add the light brown sugar and granulated sugar to the melted butter and whisk until smooth and well combined.

Step 4

Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is light and creamy.

Step 5

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Gently fold in the chopped macadamia nuts until evenly distributed throughout the batter.

Step 7

Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.

Step 8

Bake the blondies in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely in the pan on a wire rack.

Step 9

While the blondies are cooling, prepare the caramel maple topping. In a medium saucepan, combine the heavy cream, maple syrup, butter, and light brown sugar over medium-low heat.

Step 10

Stir the mixture constantly until the sugar has fully dissolved and the mixture begins to bubble gently. Let it simmer for 3-4 minutes, or until slightly thickened. Remove from heat and allow to cool slightly.

Step 11

Once the blondies have cooled, pour the caramel maple topping evenly over the top, spreading gently with the back of a spoon or an offset spatula.

Step 12

If desired, sprinkle the finished blondies with a pinch of sea salt to accentuate the sweetness.

Step 13

Let the topping set for 10-15 minutes before slicing the blondies into squares or rectangles.

Step 14

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days.
