Ingredients

  • 2 cups Elbow macaroni
  • 3 cups Fresh spinach
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2.5 cups Whole milk
  • 2 cups Sharp cheddar cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 4 Eggs
  • 4 cups Day-old bread, cubed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

Cook the elbow macaroni in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Sauté the spinach for 2-3 minutes until just wilted. Remove from heat and set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to create a roux.

Step 5

Gradually whisk in the milk, ensuring there are no lumps. Cook, stirring continuously, until the mixture thickens, about 5 minutes.

Step 6

Remove the saucepan from heat and stir in the cheddar cheese and Parmesan, reserving a small amount of Parmesan for topping. Mix until the cheese is melted and the sauce is smooth. Season with salt, black pepper, and nutmeg.

Step 7

In a large mixing bowl, whisk the eggs. Slowly pour in the cheese sauce while whisking to temper the eggs.

Step 8

Add the cooked macaroni, sautéed spinach, and cubed bread to the cheese mixture. Gently fold everything together until fully coated.

Step 9

Transfer the mixture into the prepared baking dish and level it out. Sprinkle the reserved Parmesan cheese on top.

Step 10

Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the strata is set.

Step 11

Let the strata cool for 5-10 minutes before serving. Slice into portions and enjoy!
