  • 1 piece mango (ripe, diced)
  • 1 piece red onion (small, finely chopped)
  • 1 piece red chili (optional, thinly sliced)
  • 15 ml lime juice
  • 2 tablespoons fresh cilantro (chopped)
  • 500 grams cooked white rice (cold)
  • 2 tablespoons vegetable oil
  • 2 pieces egg (beaten)
  • 4 cloves garlic (finely chopped for rice)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Marinate the chicken thighs by combining soy sauce, vinegar, 3 minced garlic cloves, bay leaves, and black peppercorns in a bowl. Add the chicken and coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for better flavor.

Step 2

While the chicken marinates, prepare the mango salsa by mixing the diced mango, red onion, red chili (if using), lime juice, and fresh cilantro in a bowl. Set aside in the refrigerator.

Heat a large skillet over medium heat. Add the marinated chicken thighs, including the marinade, and pour in water. Simmer uncovered, turning occasionally, until the chicken is tender and the sauce has reduced to a thicker consistency, about 25 minutes.
