Ingredients

  • 5 medium yellow squash
  • 1 medium onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 units large eggs
  • 0.5 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup crushed Ritz crackers
  • 2 tablespoons butter, melted
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Wash the yellow squash and slice them into 1/4-inch thick rounds. Peel and finely dice the onion.

Step 3

In a large skillet, combine the sliced squash, diced onion, and water. Heat over medium, cover, and cook for about 8-10 minutes, or until the squash is tender. Stir occasionally to prevent sticking.

Step 4

Drain the cooked squash and onion mixture in a colander, pressing gently with a spoon to remove excess liquid.

Step 5

Return the squash and onion to the skillet and stir in the salt, black pepper, and 4 tablespoons of butter. Allow the butter to melt and coat the vegetables evenly.

Step 6

In a medium bowl, whisk together the eggs and sour cream. Gently fold in the shredded cheddar cheese.

Step 7

Add the squash and onion mixture to the egg and sour cream mixture, stirring until fully combined.

Step 8

Grease a 9x13-inch baking dish with butter or nonstick spray. Pour the squash mixture into the dish, spreading it evenly.

Step 9

In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole as a crispy topping.

Step 10

Bake the casserole in the preheated oven for 30-40 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Step 11

Remove the casserole from the oven and let it cool for 5 minutes before serving. Enjoy your homestyle Ma Fern's Squash Casserole!
