  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup white or brown rice
  • 1 medium (chopped) onion
  • 2 minced garlic cloves
  • 1 14.5-ounce can canned diced tomatoes
  • 1 8-ounce can tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 cup water

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers upright in a large baking dish.

Step 3

Cook the rice according to the package instructions and set aside.

Step 4

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 more minute.

Add the ground beef to the skillet and cook until it is browned and fully cooked, breaking it apart with a spoon. Drain any excess grease.
