  • 1 large yellow onion (diced)
  • 2 medium carrots (sliced into rounds)
  • 2 medium celery stalks (chopped)
  • 2 cups chicken broth
  • 0.5 cups heavy cream
  • 2 tablespoons fresh parsley (chopped, optional)
  • 4 servings mashed potatoes

Directions

Step 1

In a shallow dish, combine flour, paprika, garlic powder, 1 teaspoon of salt, and black pepper.

Step 2

Pat the chicken breasts dry with a paper towel, then dredge each piece in the seasoned flour mixture, shaking off any excess. Set aside.

Step 3

Heat olive oil and butter in a large skillet over medium heat. Once hot, add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside (chicken will finish cooking later).

In the same skillet, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened, stirring occasionally.
